Description

This single batch of Laganory has been quietly maturing in our cheese store for 9 months and we think the long wait was well worth it. Our standard Laganory is normally matured for around 4 months, but we wanted to see what would happen to the flavour and the texture if we allowed it to develop for longer.

The result is a smooth, buttery firm cheese that retains the freshness and tang of Laganory, but has a deeper, richer and more intense flavour. We think the best way to describe it is Laganory with the flavour dialled all the way up! We hope you enjoy it.  

As with all our single batch cheeses, we welcome feedback from those who have tried them. We already anticipate that we’ll make this cheese again in the future, but given the length of time it takes to mature, it will be next year at the earliest before it returns to our shop.

Mature Laganory is made with organic milk from our cow with calf dairy farm. Cheese is cut to order to maximise shelf life. Laganory is best eaten within 4 weeks of cutting.

Your cheese order will be delivered in Woolcool packaging, a system of eco-friendly insulated packaging made from sheep’s wool. This packaging keeps our cheeses below  5oC  for 48 hours so that they reach you perfectly chilled and ready to enjoy. Cheeses are sent using a next day delivery courier service, however occasionally delivery can be delayed. If you receive your cheese a day later than expected, the cheese will be absolutely fine. The Sorba-freeze ice packs we use are reusable, they can be dehydrated (on a radiator) and rehydrated with water and refrozen.

We dispatch orders once a week, on Tuesdays. For same week delivery, please place your order by 1pm on Monday.

You can schedule your delivery in advance, although some products, such as Garnie, have restricted dispatch windows.
