Introducing Skinny Blue, an experimental batch of blue cheese that we’ve fallen slightly in love with.  This is a cheese for people who love a really strong blue, it’s powerful, punchy, sharp, tangy, aromatic and goes well with a rich, red wine.  Why skinny? Because it’s made with low fat milk and as a ripened cheese it has a fat content 33% lower than Fleet Valley Blue. Here’s the story behind it…

The way we currently manage our farm means the calves arrive in two fairly short blocks of time, one half of the herd calve in autumn and the other half in the spring. This means there’s a seasonal cycle to the composition of the milk, and what fluctuates most is the butterfat content.  

During January and February the butterfat content of our milk was so low that we couldn’t make our usual cheeses so we decided to experiment to see what cheeses we could make with low fat milk.  We made two batches of this cheese, this is the second of those batches so when it's gone that will be it for this year. Since we have now passed the ‘low fat milk’ phase we'll need to wait till winter before we can make it again.
